Lemon-Poppyseed Muffin Scones

I adapted this from the Betty Crocker website.

1 box Betty Crocker® Lemmon-Poppyseed Muffin Mix
1/2 C. milk
1 egg white

1. Heat oven to 350°. Spray cookie sheet or line with parchment.
2. In a large bowl, stir the milk and egg white until blended. Stir in muffin mix. Dough will be sticky.
3. With floured fingers, shape the dough into an 8-inch round. Cut into 8 pieces before baking.
4. Bake 20 to 25 minutes or until golden brown.
5. Let cool slightly before drizzling with lemon glaze (from muffin mix).
6. Serve warm.

Cream Cheese Banana Nut Bread


Cream Cheese Banana Nut Bread
***Makes 2 loaves***



3/4 c. butter, softened
1 (8 oz.) pkg. cream cheese, softened
2 c. sugar
2 large eggs
3 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 cups mashed bananas (about 4 medium bananas)
1 cup roughly chopped pecans, toasted- I used almonds instead since Aaron's allergic to pecans and it turned out great!
1/2 tsp. vanilla extract

Beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition.

Combine flour and next 3 ingredients; gradually add to butter mixture, beating at low speed just until blended. Stir in bananas, pecans, and vanillla. Spoon batter into 2 greased and floured 8x4 inch loafpans.

Bake at 350 degrees for 1 hour or until a long wooden pick inserted in center comes out clean and sides pull away from pan, shielding with aluminum foil last 15 minutes to prevent browning, if necessary. (I found that after one hour, my banana bread wasn't completely cooked through. I ended up baking it for an extra 10-15 minutes.) Cool bread in pans on wire racks for 10 minutes. Remove from pans, and cool 30 minutes on wire racks before slicing.

Classic White Bread

Ingredients:
     6 cups flour
     3 TBSP sugar
     1 TBSP salt
     2 TBSP shortening
     4 1/2 tsp active dry yeast
     2 1/4 cups very warm water
     2 TBSP melted butter

1. Mix yeast into warm water and allow to get foamy. Mix 3 cups of flour, sugar, salt, and shortening in stand mixer using dough hook. Add yeast and water and mix until somewhat combined.

2. Gradually add in remaining flour, one cup at a time, and allow mixer to knead for several minutes.

3. Allow dough to rise for one hour or until double in size. Punch down and cut in half. Roll out dough and then roll up to fit into bread pans.

4. Heat oven to 425 degrees. Bake for 20-25 minutes, or until loaves sound hollow when tapped. Remove to wire rack and brush tops with melted butter.

Taitum's Pizza Dough

Ingredients
  • 1-1/4 cups hot water
  • 2 Tbsp sugar (or 1 Tbsp honey)
  • 1 Tbsp of fast acting yeast
  • 3-1/2 cups of flour
  • 1 tsp salt
Directions
Mix water, sugar, and yeast. Make sure yeast is bubbling. Stir in salt and flour. Knead until smooth and elastic, add up to 1/2 cup additional flour if necessary. Let rise until double. Roll onto skookie pans. Add Jared's sauce and desired toppings. Bake at 450 degrees for 15 minutes. There is no need to pre-bake the crust.
